The pecan also known as carya illinoinensis is a member of the hickory family that is found in the southern part of the United States and also in Mexico. It is considered a drupe which is a fruit with a pit and it grows inside a husk. The seeds of the pecan are able to be eaten. When eaten you taste a buttery flavor and it can be eaten cooked or fresh. Some meats are also smoked with pecans to give them that same flavor.
Pecans have good nutritional value and for some, there is a movement to have you replace your multi-vitamin. Why do you ask? Because the pecan is fluent in fiber, manganese, magnesium, phosphorus, zinc, and thiamin. All vitamins found in your multi-vitamin that help to keep your human body healthy. Ellicott City Restaurant which is in Maryland and renamed Portalli’s located at 8085 Main Street has a salad special to them as it adds the pecans in Spinach and Quinoa salad. It is made of toasted pecans, apple, craisin, red onions, goat cheese and balsamic vinaigrette for $8.00.

The Louisiana Pecan Festival is one of the historical celebrations which was born after the growing of pecan. Pecan in this area was the most consumed food and local native American depended on pecan for a survivor. More to that during the time of scramble for land when the settler was moving from place to place due to the revolution in agriculture, the settler arrived in this area and therefore some improvement was achieved. One of them is that pecan was grown in the large plantation, therefore, the production increased at the high rate. Also, there was wild pecan but the due arrival of settlers they were grafted with the better one.
The festival is celebrated in the first weekend of November every year. It marks many full events like cooking contest, arts and crafts booth, carnival rides, grand parade and of course food, especially pecan. Early on, it was done Friday and Saturday but due to hosting more visitor and more event increasing more and more vendor and craft seller in the area it was extended to Sunday.
